Red, Orange, Green Quesadillas

Note: Experiment by substituting different vegetables for the different colors. Try red or orange peppers, small broccoli florets, and shredded zucchini. Depending on the vegetable, you might want to get an adult to help you precook them before adding to the quesadilla.

Prep time: 10 minutes

What you need:

  • 4 whole-grain tortillas (6 inch)
  • ½ cup shredded cheese
  • 1 large carrot, shredded
  • 1 tomato, diced
  • 1 small can chopped green chiles
  • salsa for dipping (optional)

Equipment & supplies:

  • Measuring cups
  • Microwave-safe plate
  • Pizza cutter

What to do:

  1. Place one tortilla on a microwave-safe plate and top with ¼ cup shredded cheese.
  2. Sprinkle with shredded carrot, diced tomato, and chopped chiles.
  3. Cover with second tortilla and microwave for 30-60 seconds, or until melted.
  4. Repeat steps to create second quesadilla.
  5. Cut the quesadillas into wedges and serve with salsa.
