Razzle Dazzle Muffins

Prep time: 40 minutes

What you need:

  • 1 1/3 cups all-purpose flour
  • 1 cup rolled oats
  • 1/4 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 cup nonfat milk
  • 1 egg, beaten
  • 3 tablespoons canola oil
  • 1 1/4 cup blueberries, rinsed
  • 3/4 cup raspberries, rinsed

Equipment and supplies:

  • oven
  • measuring spoons and cups
  • two bowls - one medium and one large
  • spoon for mixing
  • muffin tin
  • paper liners for muffin tin

What to do:

  1. Ask an adult to preheat the oven to 375 degrees Fahrenheit.
  2. Line muffin cups with the paper liners.
  3. In a large bowl, combine flour, rolled oats, brown sugar, baking powder, and cinnamon.
  4. In a medium bowl, combine milk, egg, and oil. Whisk together.
  5. Add the wet mixture to the flour mixture in the large bowl. Stir until combined. Don't overmix.
  6. Fold in berries.
  7. Spoon the mixture into the muffin cups, approximately 2/3 full.
  8. Bake for 20 to 25 minutes or until golden.
