Unbeatable Blueberry Pancakes

What you need:

  • 1 1/4 cups plus two tablespoons all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/2 cups nonfat milk
  • 2 tablespoons canola oil
  • 1 cup blueberries, rinsed
  • cooking spray

Equipment and supplies:

  • stove (you'll need help from an adult)
  • nonstick skillet or pan
  • measuring cups and spoons
  • 2 bowls: one medium, one large
  • whisk
  • large spoon or ladle for making the pancakes
  • spatula

What to do:

  1. In a large bowl, mix the all-purpose flour, wheat flour, sugar, baking powder, and salt.
    together in a large bowl.
  2. In the medium bowl, crack the 2 eggs. Add the milk and canola oil. Mix well.
  3. Add the flour mixture to the egg mixture. Whisk until blended.
  4. Gently fold in the blueberries.
  5. Coat the skillet with cooking spray
  6. Have an adult help you set a stove burner to medium heat to heat the skillet.
  7. Have an adult help you ladle the batter (about a half cup per pancake) onto the pan.
  8. Let cook a few minutes. Lift with a spatula and flip when they are light brown on the bottom. Let cook another few minutes until light brown on the opposite side.
  9. Serve with 100% maple syrup.
