Note: If you have leftover vegetables, you can use those instead and skip the sauteeing step.

What you need:

  • 2 cups broccoli and cauliflower florets, rinsed
  • large garlic clove, crushed
  • 1/2 cup mozzarella cheese, finely shredded
  • thin, prepared pizza crust (whole-wheat is a healthy choice)
  • 2 teaspoons olive oil
  • salt
  • pepper
  • cooking oil spray

Equipment and supplies:

  • stove/oven
  • garlic press or knife for mincing the garlic
  • nonstick skillet
  • baking sheet
  • pizza cutter

What to do:

  1. Have an adult preheat the oven to 425 degrees.
  2. Coat the skillet with cooking oil spray. Have an adult help you heat the skillet over medium heat.
    Add garlic and olive oil.
  3. Add cauliflower first and saute five minutes. Then add broccoli. Season lightly with salt and pepper. Saute vegetables until tender-crisp. Remove from heat.
  4. Place pizza crust on baking sheet or pizza heat. Sprinkle with 1/4 cup shredded cheese.
  5. Add broccoli and cauliflower on top.
  6. Top with the rest of the cheese.
  7. Bake for 12 minutes, or until cheese melts and begins to brown.
  8. Let cool and cut into slices

How much does this recipe make?
